World Wednesday Menu

This week we have launched World Wednesday in the Dining Room. An idea born from Head Chefs Adrian and Brendan to help inspire and educate us on diverse food, culture and customs. Each Wednesday, the menu will come from a different country or region so the girls can experience different cuisines from around the globe. 

This week's menu has been designed by Head Chef, Brendan, and takes inspiration from his family connection to Guyana in South America. 

The menu celebrates Chef Brendan's love of food and his amazing passion, which he tells me he gets from his mum and dad. His mother is from Guyana, and without forgetting his Dad who himself was a master chef from England, who worked for many high-profile figures and in many countries around the world.  Therefore, Brendan decided to take up the task of becoming a chef himself. Before coming to Godstowe, Brendan was trained by his father and had worked with and for many high-end clients, companies and Michelin star chefs, but he really feels that his passion of food tastes and flavours will always come from his Mothers background and culture, and his father’s affinity for food.

Chef's Choice this week was Pepper pot, which is Guyana's national dish, made popular by the Amerindian people, and is often served at Christmas and special occasions. It includes cassareep (the juice of the cassava boiled until it reduces and caramelises) and wiri wiri peppers — small and spicy cherry peppers native only to Guyana.

The cuisine of Guyana has been greatly influenced by both its colonial history and its ethnic populations. As a result, the food of Guyana is incredibly diverse taking elements from Creole, East Indian, African, Portuguese, Amerindian, Chinese and European cuisines.  Root vegetables like cassava and sweet potatoes are staples of the country’s diet.  Seafood is also a major part of Guyanese cuisine as are fresh fruits.  Green seasoning, a combination of herbs, onions, hot peppers, and garlic are used to flavour many of Guyana’s dishes.
